Disney's Grand Floridian Victoria and Albert's Potato Souffle


Ingredients:
1 baking potato
2 eggs, separated
1/3 heavy cream
2 tablespoons butter
2 tablespoons flour
4 tablespoons chives, finely chopped
1/4 teaspoon cream of tartar
salt & pepper

Peel and dice potato into 8 small pieces. Steam potato until soft. In a food processor, add potato, cream, salt, pepper and flour. Blend 4 to 5 minutes until light and well whipped. Add butter and egg yolks and blend well. Beat egg whites with cream of tartar until soft peaks form. Fold into potato mixture and add chives.
Transfer potato mixture into a buttered soufflé dish.
Preheat oven and a water bath large enough to hold soufflé dish to 350 degrees. Set potato soufflé in hot water bath and bake 20 to 30 minutes.
 Potato will rise and brown. Serve immediately.
