Disney's Bridgetown Beef Fajitas



Served at the Bridgetown Broiler and Disney's Caribbean Beach Resort, these are classic fajitas with a wonderful marinade.

Beef with Marinade
 

2 pounds skirt steak, trimmed and sliced thin

Marinade
1/2 cup soy sauce
1/2 cup water
2 tablespoons soybean oil (I didn't have this so used olive)
1/4 cup scallions, chopped
1 bunch cilantro, chopped
juice of 2 limes
1 clove garlic, crushed
Combine all ingredients and blend well. Add the sliced beef, cover and refrigerate overnight.
 
Fajita ingredients

1 large green pepper, julienne
2 large onions, julienne
1 tablespoon oil
1 head lettuce, shredded
1 cup guacamole
1 cup grated cheese
1 cup salsa
1 cup sour cream
8 large flour tortillas
 

Wrap tortillas in foil and place in 250 oven to warm

Heat a skillet with the oil and quickly saute green pepper and onion until tender and lightly browned. Remove from skillet and keep warm.

 
Drain skirt steak and add to hot skillet. Saute for 5-7 minutes, or until cooked as desired. Remove from pan and keep warm with onions and peppers.

Assemble fajitas as desired.
