Disney Recipe ~ Empress Lilly Cheese Crepes


The Empress Lilly, named for Walt's wife Lillian, was a restaurant in what is now Downtown Disney at Walt Disney World. Designed as an authentic replica of a paddle wheel steamboat in the era of Mark Twain, the restaurant was an upscale, elegant experience. Although the restaurant closed in 1995, it is still a favorite memory of many.

Ingredients:
5 tablespoons butter
5 tablespoons flour
2 cups milk
1/2 pound grated Gruyere cheese
1/2 pound grated Cheddar cheese
dash Tabasco
1/8 teaspoon Worcestershire sauce
Salt & pepper to taste
7-inch crepes (recipe follows)

Heat butter in a saucepan. Stir in flour with a whisk and cook and stir for 2 minutes. Add milk, stirring constantly until mixture comes to a boil and is thickened.
 Add cheeses and stir over low heat until cheese is melted.
 Add seasonings to taste. Sauce should be thick. Put approximately 1/2 cup on each crepe and roll.

Crepes
Crepes are super easy to make!
You will need: 2 eggs, 1/8 teaspoon salt, 2 tablespoons cooled melted butter, 1 teaspoon sugar, 3/4 cup flour, 1 cup milk.
Beat all ingredients until smooth. Heat 7" frying pan until hot. Oil lightly and pour 3 tablespoons batter into pan. Tilt pan to make thin layer. Brown lightly on both sides.

This dish is very rich and the sauce thick. Although good, I think it would taste lighter if the cheese was reduced and the sauce creamier.
