This hugely popular breakfast item from the Kona Café is essentially a banana stuffed French toast. Of course, anything eaten at Disney takes better, but you can easily duplicate this hearty and not too sweet dish at home.
Ingredients:
1 loaf sourdough bread, uncut, 12 inches long
2 large bananas
Oil for frying
3/4 cup sugar
2 teaspoons cinnamon
Batter:
4 large eggs
1 1/3 cup milk
1 teaspoon vanilla
1/4 teaspoon cinnamon
1 tablespoon sugar
Mix 3/4 cup sugar and 2 teaspoons cinnamon in a shallow bowl that is large enough to roll toast. Set aside.
Batter:
Whip eggs until well beaten, then add milk, cinnamon and sugar. Mix well and set aside.
Slice the bread into four three-inch thick slices ( I couldn't find a rectangle loaf, so made a round loaf work). Peel bananas and cut in half crosswise, then cut each piece lengthwise. Place a bread slice on the counter and carefully cut a pocket inside each slice, removing a bit of the bread so half a banana will fit. Stuff half a banana into each bread slice.
Dip stuffed bread into batter, covering both sides and allowing excess batter to drip off.Carefully place slice in hot oil. Recipe calls for deep fat frying, but I used a deep chicken frying type fry pan, and only enough oil to come halfway up bread slice. Cook 4-5 minutes per side. Drain on paper toweling then roll in sugar cinnamon mixture until well coated. Repeat for each piece of toast.
This was delicious served with sausage patties that had a bit of a bite for contrast.
