Disney World ~ Boardwalk Bakery ~ Peanut Butter, Banana, and Applewood-Smoked Candied Bacon Pie

Have you ever read a recipe and thought, hmmm...did they leave something out or write the recipe wrong? And then did you figure it must be correct and go ahead and make it? And then still wonder if it's right or wrong? Because if it's right, it isn't very good.
That's what happened when I attempted this recipe. Who doesn't like bacon, banana, and peanut butter? Another question I had immediately was why the picture in the cookbook looked absolutely nothing like what the instructions told you to make.
The picture is of a bar, not a pie. Not even close.
 I present to you the recipe as printed in the book with a suggestion on the fix.
Ingredients
 3 thick slices applewood smoked bacon
1/4 cup brown sugar
9-inch store bought chocolate graham cracker pie crust ( my store didn't have this, but had an Oreo shell)
1 cup peanut butter
1 cup cream cheese
2 tablespoons sugar
1 cup whipping cream
2 bananas sliced

Preheat oven to 375. Line a small walled baking sheet with parchment paper, and place a wire rack over the baking sheet.
Coat bacon on both sides with brown sugar.
 
Place on rack and bake 20-30 minutes, or until crispy, depending on thickness of bacon
Remove from oven. Once cooled, dice and set aside.
In the bowl of an electric mixer fitted with the paddle attachment, cream together peanut butter,
 cream cheese and sugar on medium speed until smooth.
Transfer to a separate bowl and clean mixer bowl.
Fit mixer with whisk attachment and pour cream into cleaned mixer bowl. Whip cream to soft peaks on high speed; gently fold into peanut butter mixture.
Fill pie shell halfway with mixture, then evenly top with banana slices.
Cover with remaining mixture. Sprinkle with chopped bacon. Refrigerate until ready to serve, preferably overnight.

Any red flags? YES! There is only 2 tablespoons of sugar in the whole thing. I thought maybe the chocolate shell, the natural sweetness of the bananas, and the sugar in the peanut butter would be enough. I was wrong. It is very heavy on the cheese and peanut butter flavor and is not all that appealing. However, if you added more sugar and tasted along the way, it could be transformed to yummy. Worth a try.
