Tony's Town Square Restaurant Recipe ~ Fettucine & Meatballs ~ Walt Disney World

What says comfort food better than spaghetti and meatballs? Make this recipe for comfort food with a touch of Disney thrown in.

1 1/2 pound fettucine (fresh or dried)
Tony's house sauce recipe
Tony's Italian meatballs.

Yep! Sauce from scratch.
Tony's House Sauce
1 celery stalk, diced (2/3 cup)
1 small onion, diced (1 1/2 cup)
1 1/2 teaspoons garlic, chopped
1/8 cup extra virgin olive oil
12 ounces tomato paste
10 3/4 ounces tomato puree
2 28-ounce can tomatoes, whole, cut in half with juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried sweet basil
1/2 teaspoon oregano
1 1/2 bay leaves
1/4 cup sugar
Dash dried thyme, chili powder, dried rosemary & Spanish paprika

In a large pot, sauté celery, onion and garlic in olive oil. Add all other ingredients.
Remember to use juice from both cans of tomatoes. Simmer for 1 1/2 hours. Taste and correct seasoning, if desired.
 
Tony's Italian Meatballs
1 1/2 pounds ground beef
1/2 pound bulk Italian sausage
1/4 cup onions, minced
1/2 cup bread crumbs
3/4 cup water
1 teaspoon salt
1/2 teaspoon ground pepper
2teaspoons oregano
1 1/2 teaspoons garlic, granulated
2 teaspoons parsley flakes, dried
1 egg
1/4 cup Parmesan cheese, grated
1/2 teaspoon caraway seeds
2 teaspoons basil leaves
 
Heat over to 350 degrees. Combine ingredients and mix thoroughly. Refigerate for 4 hours before making into meatballs
Prepare meatballs about the size of golf balls and place on a cookie sheet side by side. Cook in over 15-20 minutes, or until firm to touch.
To serve, cook fettucine and drain. Top with Tony's house sauce and Tony's Italian meatballs.
